Aqua originated as a tapas restaurant in 2003. While the menu has changed, Aqua continues their commitment to create dishes with the freshest seasonal items available presented with a creative touch.
Today, Aqua offers a refined and eclectic dining experience, thanks to a varied menu that features an ever-changing selection of tapas, small plates, and big plates. The creation of dishes on the vast menu is overseen by executive chef Jon MsGregor.
A graduate of Johnson and Wales College of Culinary Arts in Charleston SC. Jon worked at several Renaissance hotels in Charleston and Charlotte.
His love of seafood and the coast brought him back to Carteret County where he became Chef de Cuisine for Aqua Restaurant in Beaufort and eventually Executive Chef of both Aqua and Clawson’s 1905 Restaurant & Pub.
Jon loves using local ingredients such as Carteret county seafood and produce. He has partnered with Merrell Farms of Beaufort, to bring fresh seasonally available local vegetables to both menus.
Jon proudly sources many of their ingredients from premium local and regional producers offering fresh, local products and supporting our local fishermen and farmers. They offer a wonderful selection of vegetarian and gluten-free dishes.
Aqua’s small plates offer an exciting array of tastes in ‘just right” portions ideal for passing around the table or enjoying two or three as a full meal. Aqua’s big plates feature the freshest North Carolina seafood and Choice Beef Filet, as well as local produce when it’s seasonally available.
Tapas is based on the traditional Spanish idea of passing small plates of food around the dinner table. Tapas-style dining was designed to encourage conversation. Tapas items can be enjoyed in a just a few bites and are perfect for exploring new flavors.
Small plates are larger than tapas items and are designed to be passed around the table, appetizer style. Their small plates enable diners to experience different kinds of flavors without feeling overfull.
Big plates are the size of a typical entree, and are the perfect size for one — not that they can’t be shared as well.

At Aqua, their passion for food is rounded out by their lust for finding the perfect wine pairing. The wine list boasts more than 80 vintages across a moderate price range. The Aqua staff receives regular wine training and is always ready to help you pick out a perfect pairing for your meal.
Wine dinners throughout the year allow culinary enthusiasts to sip and explore. Twice a month on Tuesday, Aqua hosts Wine-O-rama, a casual four-wine table side tasting for $12 per person with an industry professional. For a great evening, order dinner and enjoy the wine tasting right at your table. Bottled wine discounts of 33% (Friday), and $5.99 wine by the glass (daily).
