Blue Moon Bistro returns to Beaufort’s dining scene and while the ownership has changed, the commitment to make this restaurant an acclaimed destination for “farm and dock to table” cuisine has not. Chef/Owner Jayson Foster and two investors have completely transformed the 1827 historic sea captain’s home into a vibrant French Bistro.
Chef Jayson pairs classical French techniques with timeless, yet creative modern presentations, many emphasizing local seafood and produce. In fact, most of his dishes are inspired by local ingredients and a regional influence of flavors. And although local seafood is of great significance on the menu, foodies will also find a solid selection of meat and poultry dishes, as well as interesting vegetarian dishes among the entrées and nightly features.
Blue Moon Bistro’s seasonal menu offers a wide selection of appetizers, soups, and salads with a wonderful assortment of delicious desserts and an extensive wine list.
Jayson developed a love of cooking while spending time with his mother and grandmother in the kitchen. In 1996, he moved to Beaufort and began his culinary path by washing dishes at the Spouter Inn & Restaurant.
After several stints at other dining spots, Jayson was hired by Chef William Bell as sous-chef de cuisine at William’s Casual Fine Dining. A member of the second graduating class at Carteret Community College Culinary Program, Jayson was one of three students in 2008 to travel abroad to France as part of the Goellner French Exchange program. He studied under two-starred Michelin Chef Marc Meurin. In 2012, he was on the winning team in Wilmington’s “Fire on the Docks,” part of the “Got to be NC” Competition Dining Series.
Jayson has created a loyal following on the local food scene through the years by cooking at Chef’s 105, Circa 81, and Aqua, where he was the Executive Chef for 10 years.
Tucked away in a quiet residential neighborhood just steps from historic Front Street, the restaurant occupies the 1827 Dill House. The dining space has been completely renovated into an intimate 50-seat restaurant with a small bar, and a blend of tables with banquettes configured along the walls. Outside dining on the porch is available.
Wildly unique, Blue Moon Bistro caught the attention of romance novelist Nicholas Sparks. The #1 New York Times bestselling author included the restaurant in his 2020 novel “The Return.” Set in New Bern, North Carolina, the young couple came to Beaufort for a romantic dinner at Blue Moon Bistro.
